NuWave Oven Recipe: Pizza Potato Skins

Here is our latest NuWave Oven creation, from our own kitchen - a new Family Favorite!

INGREDIENTS
1 c. of your favorite tomato/spaghetti sauce
Shredded Mozzarella Cheese (low-fat and melts great)
1 c. of fresh, diced tomatoes
1 c. of fresh, diced white onions
Turkey Bacon (2 strips per person)
Russet Potatoes (2 potatoes per person)
Garlic Powder (not Garlic Salt)
Oregano
Oil or Cooking Spray
Optional: Dipping sauces (sour cream, ranch, salsa, etc)

DIRECTIONS
Wash potatoes and lightly coat your hands with oil and rub around outside of potatoes

Cut potatoes in half (do not peel)
If you want less potato – scoop out. We keep the potato in the skin

On the potato - lightly spread oil or use spray oil

Sprinkle Garlic POWDER and Oregano on top of each potato

Arrange potatoes on 4” rack – UPSDIE DOWN (see photo below)

On shorter rack – place two strips of Turkey Bacon (per person – see photo below)

Turkey Bacon (on top)

Cooked bacon until extra crispy, approximately 20 minutes – blot with paper towel to remove any excess moisture/fat

The moisture/fat from the bacon will drip onto the potatoes, that is a good thing!

Once bacon is crispy cooked – remove from NuWave Oven - Dice bacon into tiny pieces. Set aside

While bacon and potatoes are cooking – if you have not already done so, dice up tomatoes and onions
