Apple-Blackberry Cobbler in the NuWave Oven | Yum!

It’s been a while since I shared a recipe with our NuWave Oven. After today’s Bountiful Basket Co-Op selection, I decided to share a Dessert. Yes, you can bake desserts in the NuWave.


I decided to make a Apple-Blackberry Cobbler with some healthier options. Below is the basic recipe – what you see in red is the substitutions I made to make it less fattening/calorie loaded. The taste is fresh, you taste fruit, not SUGAR and it’s a great dessert for the entire family.


• 1/4 cup butter, softened
• 1/3 cup sugar
• 1 cup sifted all-purpose flour (wheat flour)
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 1/2 cup milk (non-fat milk)
• 2 cups blackberries
• 1 cup diced apples (peeled and cored)
• 1/2 cup sugar (1/8 cup)
• sugar for sprinkling on top

Simple Ingredients!

Preparation:
Cream butter and 1/3 cup sugar until light and fluffy.

Sift together the flour, baking powder, and salt.

Add dry ingredients to creamed mixture alternately with the milk; beat until smooth (added ¼ c. more milk or water to make more liquidy)

In a separate bowl, combine blackberries, apples, and 1/2 cup sugar (1/8 cup sugar)

Put fruit mixture in a buttered (non-fat cooking spray) 9-inch round cake pan.

Pour batter over the fruit. Sprinkle with a little sugar.(1/16 cup sugar)

Bake at 375° for 45 to 50 minutes. (Bake on HIGH for 25 minutes in NuWave Oven)

Option: Serve with cream or ice cream. (Serve with non-fat ice cream or frozen yogurt). Best if served warm.

Time Saving Tip:  While the cobbler is baking, clean up your cooking mess and don't let the dishes pile up, so you can enjoy the rest of your day!
